  • 1/3 cup unsalted butter, cold and cubed (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together 2 1/2 cups flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  3. In a medium bowl, whisk together pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients. Fold gently with a spatula until just combined; batter should remain lumpy. Do not overmix.
  5. In a small bowl, combine 3/4 cup flour, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon. Cut in cold cubed butter using a fork until pea-sized crumbs form.
  6. Divide batter evenly among muffin cups, filling each about 2/3 full. Spoon crumb topping generously over each muffin.
  7. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to ensure fluffy texture. Use cold butter for the crumb topping to maintain crunch. Ensure you use pure pumpkin puree, not pumpkin pie filling. For gluten-free, use a 1:1 blend with xanthan gum. Store at room temperature for up to 3 days.
