  • 1 teaspoon pure vanilla extract
  • 1 cup light corn syrup
  • 1/2 teaspoon flaky sea salt
  • 1 pre-made or homemade 9-inch pie crust

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a large skillet over medium heat, stirring constantly until milk solids turn golden brown and smell nutty (3-5 minutes). Remove from heat and let cool for 10 minutes.
  3. Press pie crust into a 9-inch pie dish, trim excess, and prick the bottom with a fork.
  4. Toast pecans on a baking sheet in the oven for 5-7 minutes until fragrant. Let cool completely.
  5. In a large bowl, whisk eggs until smooth. Add brown sugar, granulated sugar, and salt; whisk vigorously until pale and thickened.
  6. Stir in cooled brown butter, heavy cream, bourbon, and vanilla extract until smooth and glossy.
  7. Pour toasted pecans into the pie crust and spread evenly. Slowly pour filling over pecans, ensuring they are submerged.
  8. Bake on center rack for 50-60 minutes until edges are set but center still jiggles slightly. Cover crust edges with foil if browning too quickly.
  9. Cool completely on a wire rack for at least 2 hours before slicing to allow filling to set.

Notes

Ensure brown butter is cooled slightly before adding to eggs to prevent scrambling. The pie continues to cook as it cools, so a slight jiggle in the center when removing from the oven is desired. For storage, keep at room temperature for 2 days or refrigerate for up to 5 days. Can be frozen for up to 3 months.
