  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk, room temperature
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Peel and dice apples into small cubes. In a skillet over medium heat, melt 2 tablespoons butter. Add apples, 2 tablespoons brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Cook 5-7 minutes until tender and syrupy. Set aside to cool completely.
  2. In a small bowl, whisk together 1/3 cup granulated sugar and 2 teaspoons cinnamon for the swirl. Set aside.
  3. Preheat oven to 350ยฐF. Line a 9×5-inch loaf pan with parchment paper, leaving overhang. Lightly grease.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, and 1/2 teaspoon salt. Set aside.
  5. In a large bowl, beat 1/2 cup softened butter and 3/4 cup granulated sugar until light and fluffy (2-3 minutes). Scrape down sides.
  6. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  7. Add flour mixture in three additions, alternating with buttermilk, starting and ending with flour. Mix until just combined.
  8. Spread half the batter into the prepared pan. Sprinkle half the cinnamon sugar mixture over batter. Spoon cooled apples evenly on top. Drop remaining batter in spoonfuls over apples and gently spread. Sprinkle remaining cinnamon sugar on top.
  9. Use a butter knife to gently swirl layers with a few figure-eight motions. Bake 50-60 minutes until a toothpick inserted in center comes out clean or with moist crumbs.
  10. Cool in pan 15 minutes, then lift out using parchment. While warm, brush top with 2 tablespoons melted butter and sprinkle with topping mixture of 2 tablespoons sugar and 1 teaspoon cinnamon. Cool completely on a wire rack before slicing.

Notes

For best texture, ensure butter, eggs, and buttermilk are at room temperature. If you don’t have buttermilk, add 1 tablespoon lemon juice or white vinegar to 1/2 cup milk and let sit 5 minutes. Don’t skip cooling the apples before adding to batter. Check for doneness at 50 minutes; tent with foil if browning too quickly. Let bread cool completely before slicing for clean slices.
