Ingredients

Scale
  • 1 cup warm water (about 110°F)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tablespoon granulated sugar
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 1/2 cups cooked, shredded chicken
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1/3 cup buffalo wing sauce
  • 2 tablespoons ranch or blue cheese dressing
  • 1/4 teaspoon garlic powder
  • 8 cups water
  • 1/3 cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 3 tablespoons unsalted butter, melted (for brushing after baking)

Instructions

  1. Make the Dough: In a large mixing bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until foamy. Add melted butter, salt, and 2 cups of flour. Mix until a shaggy dough forms. Gradually add remaining 1/2 cup flour, kneading for 5-7 minutes until smooth and elastic.
  2. First Rise: Form dough into a ball and place in a lightly oiled bowl, turning to coat. Cover with a clean kitchen towel and let rise in a warm spot for 45 minutes to 1 hour, until doubled in size.
  3. Make the Filling: In a separate bowl, combine softened cream cheese, shredded chicken, mozzarella, cheddar, buffalo sauce, ranch dressing, and garlic powder. Mix until well combined and creamy. Set aside.
  4. Prepare the Bath & Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. In a large pot, bring 8 cups of water to a boil. Carefully add 1/3 cup baking soda (it will fizz). Reduce heat to a gentle simmer.
  5. Assemble the Bites: Punch down the risen dough and turn out onto a lightly floured surface. Roll into a 12×12 inch square. Cut into 16 equal squares (about 3×3 inches each).
  6. Stuff and Seal: Place a heaping tablespoon of chicken filling in the center of each dough square. Gently stretch corners up and over filling, pinching seams tightly to seal. Roll gently in hands to smooth.
  7. The Baking Soda Bath: Carefully drop 3-4 pretzel bites into the simmering water bath at a time. Boil for 30-45 seconds, turning once halfway. Remove with a slotted spoon and place on prepared baking sheet, seam-side down.
  8. Bake: Brush tops with egg wash. Sprinkle generously with coarse sea salt. Bake for 12-15 minutes, until deep golden brown.
  9. Finish with Butter: As soon as they come out of the oven, brush hot pretzel bites with melted butter. Let cool on baking sheet for 5 minutes before serving.

Notes

Don’t overboil the dough—30 seconds is enough. Seal edges tightly to prevent filling from leaking. Use room temperature cream cheese for a smooth filling. Work in batches when boiling. For extra spicy, add cayenne pepper or use hot buffalo sauce. Can be made in an air fryer at 375°F for 8-10 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer for best results.
