These no-bake energy bites are made with simple ingredients like peanut butter, banana, and oats. They’re soft, naturally sweetened, and perfect for school lunches or a quick snack.

  • 1 large ripe banana, mashed
  • 1 ½ cups old-fashioned rolled oats
  • ⅓ cup mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a large mixing bowl until smooth with no large chunks.
  2. Add the peanut butter and vanilla extract to the mashed banana. Stir until fully combined.
  3. Add the rolled oats, ground flaxseed, and salt. If using chocolate chips, add them now. Stir until the oats are evenly distributed and the mixture is thick enough to hold its shape.
  4. For easier rolling, chill the mixture in the fridge for 15-20 minutes.
  5. Line a baking sheet or plate with parchment paper. Using a cookie scoop or spoon, portion out about 1 tablespoon of the mixture and roll into smooth balls. Place on the parchment paper.
  6. Refrigerate the rolled bites for at least 30 minutes to set. Store in an airtight container in the fridge for up to one week.

Notes

For best results, use a ripe banana with brown spots. Wet your hands slightly before rolling to prevent sticking. The flavors improve after a day in the fridge. To freeze, place rolled bites on a baking sheet and freeze until solid, then transfer to a freezer-safe bag for up to 3 months.
