  • 1 standard bag pretzel rods (about 1215 rods)
  • 1 large yellow bell pepper
  • 23 sticks string cheese
  • 34 cups fresh spinach or arugula
  • 1 cup green grapes
  • 8 ounces salami (mix of hard and Genoa), thinly sliced
  • 4 ounces prosciutto
  • 4 ounces pepperoni
  • 6 ounces aged cheddar
  • 6 ounces Gouda (smoked or regular)
  • 4 ounces Brie (optional)
  • 4 ounces Pepper Jack cheese
  • ยฝ cup honey mustard
  • ยฝ cup ranch dressing
  • 1 cup queso or cheese dip, warmed
  • 1 cup pretzel twists or mini pretzels
  • 1 cup baby carrots
  • 1 cup celery sticks, cut into 3-inch lengths
  • 1 cup cherry tomatoes, halved or whole
  • ยฝ cup dill pickle spears or cornichons
  • Fresh rosemary sprigs (optional garnish)
  • ยฝ cup black olives (optional)
  • ยผ cup dried apricots or figs (optional)

Instructions

  1. Prepare the dips and warm elements. Spoon honey mustard and ranch into separate small bowls. Warm queso in microwave-safe bowl for 30-second intervals until smooth. Set bowls aside.
  2. Lay down the ‘field’ base. Wash and dry spinach or arugula. Spread evenly across entire board surface, leaving about an inch of space at top and bottom edges.
  3. Create the pretzel end zone. At one end of board, arrange pretzel rods side by side, perpendicular to long edge, forming a solid rectangle about 4-5 inches wide. Press gently into spinach.
  4. Build the goal post. Cut yellow bell pepper into thin strips (ยผ inch wide, 4 inches long). Arrange two strips vertically at back of end zone and one horizontally across top. Use small piece of string cheese or toothpick to hold joint if needed.
  5. Add the yard lines. Cut string cheese sticks into small rectangles (about ยฝ inch long). Place in evenly spaced rows across green spinach, running perpendicular to long edges. Create 4-5 rows total.
  6. Place the cheese. Arrange cheeses in clusters around board. Cut cheddar into cubes and fan out. Slice gouda into thin triangles and overlap slightly. Place pepper jack in small pile near one side.
  7. Add the meats. Fold prosciutto into loose ribbons. Roll salami slices into cylinders or fold into quarters. Arrange pepperoni in small pile or fan out like cards. Scatter meats around board.
  8. Scatter vegetables and fruit. Tuck baby carrots, celery sticks, cherry tomatoes, and pickles into gaps between cheese and meat clusters. Scatter green grapes across field.
  9. Add extra pretzels. Place mini pretzel twists or bites around edges of board, especially near dips.
  10. Place dip bowls. Nestle three small bowls of honey mustard, ranch, and warm queso into board, pushing gently into spinach so they sit securely.
  11. Garnish and final touches. Tuck fresh rosemary sprigs around board. Scatter black olives and dried fruit if using. Fill any empty spots with extra pretzels, grapes, or cherry tomatoes.
  12. Serve immediately or cover and refrigerate up to 4 hours. Remove from fridge 20 minutes before serving. Add dips just before serving.

Notes

For best results, keep pretzel rods away from wet ingredients to prevent sogginess. If making ahead, add pretzel rods and dips just before serving. The board tastes better after sitting out for about 30 minutes as cheeses soften and flavors meld. For transport, assemble on a baking sheet or disposable aluminum tray, cover with plastic wrap and foil, and transport flat.
