Ingredients

Scale
  • 6 large apples (peeled, cored, and sliced into 1/2-inch wedges)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/3 cup heavy cream (room temperature)
  • 1 teaspoon sea salt
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter (cubed)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a large bowl, toss apple slices with granulated sugar, lemon juice, cinnamon, nutmeg, and cornstarch until evenly coated.
  3. In a medium saucepan over medium heat, combine 1 cup brown sugar and 1/2 cup butter. Stir until butter melts and sugar dissolves.
  4. Reduce heat to low and slowly drizzle in heavy cream, a tablespoon at a time, whisking vigorously after each addition to prevent seizing.
  5. Whisk for 2-3 minutes until the sauce is smooth and glossy, then remove from heat and stir in sea salt.
  6. Pour the spiced apple mixture into the prepared baking dish and spread evenly.
  7. Pour the warm salted caramel sauce over the apples, using a spatula to help it sink in slightly.
  8. In a separate bowl, combine flour, oats, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon.
  9. Add cold cubed butter to the dry ingredients and use a pastry cutter or fingers to mix until the mixture resembles coarse crumbs with pea-sized clumps.
  10. Sprinkle the topping evenly over the caramel-covered apples.
  11. Bake for 45-50 minutes until the topping is golden brown and caramel is bubbling around the edges.
  12. If topping browns too quickly, cover edges with foil for the last 10 minutes.
  13. Let cool for at least 15 minutes before serving to allow caramel to thicken.

Notes

Ensure heavy cream is at room temperature to prevent the caramel from seizing. Use a mix of tart (Granny Smith) and sweet (Honeycrisp) apples for best texture. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend. For dairy-free, use plant-based butter and coconut cream. Let the crisp cool for 15 minutes before serving to allow the caramel to set.
