  • 4 pounds fresh peaches, peeled and chopped
  • 3 cups granulated sugar (adjust to taste)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup bourbon
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Wash and peel the peaches by scoring a small ‘X’ at the bottom, dipping them in boiling water for 30 seconds, then plunging into ice water. Peel skins off and chop peaches into roughly 1/2-inch pieces.
  2. In a large heavy-bottomed pot, combine chopped peaches, sugar, and lemon juice. Let sit for about 20 minutes to macerate.
  3. Place the pot over medium heat and stir frequently. Add butter to reduce foaming and smooth texture. Once simmering, reduce heat to maintain a gentle boil and cook for 25-30 minutes until thickened and dark amber in color.
  4. About 5 minutes before finishing, stir in bourbon and vanilla extract. Continue cooking until the preserves thicken further and coat the back of a spoon.
  5. Ladle hot preserves into sterilized glass jars, leaving 1/4-inch headspace. Wipe rims clean, seal with lids, and let cool at room temperature before storing.

Notes

Skim off foam during cooking to keep preserves clear. Stir frequently to prevent scorching. Use ripe, fragrant peaches for best flavor. Test doneness by placing a spoonful on a chilled plate; if it gels and wrinkles when pushed, it’s ready. Store sealed jars in a cool, dark place; refrigerate after opening and use within 3 weeks. For vegan version, substitute butter with plant-based alternative.
