Ingredients

  • All-purpose flour (King Arthur brand recommended)
  • Granulated sugar
  • Unsalted butter, softened to room temperature (Plugra recommended)
  • Large eggs, room temperature
  • Vanilla extract (Nielsen-Massey recommended)
  • Baking powder
  • Baking soda
  • Salt
  • Buttermilk
  • Sour cream (full-fat)
  • Rainbow sprinkles (jimmies)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or non-stick spray, dust with flour, and line bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Sift to remove lumps and aerate.
  3. In a large bowl, beat the softened butter and sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract and mix until combined. Scrape down the sides of the bowl.
  5. Add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk. Start and end with the dry ingredients. Mix on low speed until just combined. Do not overmix.
  6. Gently fold the rainbow sprinkles into the batter using a spatula.
  7. Divide batter evenly between prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. While cakes cool, make the buttercream: Beat softened butter until creamy. Gradually add powdered sugar, vanilla, and a splash of milk. Beat on high speed for 3-4 minutes until fluffy.
  10. Place one cake layer on a serving plate. Spread a layer of buttercream on top. Add the second layer. Frost the top and sides with remaining buttercream. Decorate with extra sprinkles.

Ensure all ingredients are at room temperature for best emulsification. Do not overmix the batter once flour is added to avoid a tough cake. Cool cakes completely before frosting to prevent melting. For gluten-free, use a 1:1 GF flour blend with xanthan gum. For dairy-free, use vegan butter and almond milk.
