Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 600 grams)
  • ½ cup granulated sugar (100 grams)
  • 2 tablespoons bourbon
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour (for filling)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (250 grams) (for biscuits)
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed (85 grams)
  • 1 cup buttermilk (240 ml) (or dairy-free milk with 1 tablespoon lemon juice)
  • Optional for serving: vanilla ice cream or whipped cream

Instructions

  1. Prepare the Peach Filling (10 minutes): In a large bowl, combine sliced peaches, granulated sugar, bourbon, lemon juice, cinnamon, vanilla extract, and flour. Toss gently to coat all the peaches evenly. Let this sit while you prepare the biscuit topping.
  2. Preheat the Oven (5 minutes): Set your oven to 425°F (220°C) and position a rack in the middle.
  3. Make the Biscuit Dough (10 minutes): In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add the cold, cubed butter. Using a pastry cutter or two knives, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Pour in the buttermilk and stir gently with a wooden spoon until just combined. Do not overmix.
  4. Assemble the Cobbler (5 minutes): Pour the peach filling into a greased 9×9-inch baking dish, spreading evenly. Drop the biscuit dough by spoonfuls over the peaches.
  5. Bake the Cobbler (25-30 minutes): Place the dish in the oven and bake until the biscuits are puffed, golden, and cooked through, and the peach filling is bubbling at the edges. Tent loosely with foil during the last 10 minutes if biscuits brown too quickly.
  6. Cool Slightly and Serve (5 minutes): Let the cobbler rest for about 10 minutes before serving. Top with vanilla ice cream or whipped cream if desired.

Notes

Keep butter cold to ensure flaky biscuits. Do not overmix biscuit dough to avoid toughness. If using frozen peaches, thaw and drain excess juice. Tent biscuits with foil if browning too fast. Let cobbler rest 10-15 minutes before serving to thicken filling. Prepare peach filling the night before for deeper flavor.
