  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda

  • 3/4 cup (150 g) granulated sugar
  • 1/3 cup (75 g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (90 g) walnuts, chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  2. Toast the walnuts in a dry pan over medium heat, stirring frequently until fragrant and golden, about 3-5 minutes. Remove from heat and let cool.
  3. In a mixing bowl, mash the ripe bananas with a fork until mostly smooth with some small lumps remaining.
  4. Add melted butter, granulated sugar, eggs, and vanilla extract to the mashed bananas. Stir gently with a wooden spoon until combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet banana mixture, stirring just until no flour is visible. Avoid overmixing.
  7. Fold in the cooled toasted walnuts gently to distribute evenly.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
