A rich, silky slow-cooker hot chocolate made with cocoa powder and cornstarch, topped with spooky marshmallow ghosts for a festive Halloween treat.

Ingredients

Scale
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 tablespoon instant cornstarch
  • 1/2 teaspoon salt
  • 6 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 bag mini marshmallows
  • 1/2 cup white chocolate chips
  • Black food coloring gel

Instructions

  1. In a small bowl, whisk together cocoa powder, sugar, cornstarch, and salt until uniform.
  2. Pour the dry mix into a slow cooker insert, then add the milk and stir gently to combine.
  3. Cover and cook on LOW for 2 hours.
  4. Remove lid, stir in dark chocolate chips and vanilla extract. Stir until melted and mixture thickens (15-20 minutes).
  5. While hot chocolate heats, pipe mini marshmallows into ghost shapes onto a parchment-lined sheet and freeze for 10 minutes.
  6. Melt white chocolate chips in microwave intervals. Use a toothpick or small piping tip to add black food coloring gel details (eyes/mouth) to the frozen ghosts. Let dry.
  7. Ladle hot chocolate into mugs and float 2-3 marshmallow ghosts on top. Serve immediately.

Notes

Use low heat to prevent scorching. Whisk cornstarch thoroughly to avoid clumps. Chill mugs before serving to help ghosts maintain shape. Do not freeze hot chocolate with marshmallows inside; freeze the base only.
