Ingredients

Scale
  • 6 medium ripe fresh peaches, peeled and sliced
  • 2/3 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 2/3 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cut into small cubes
  • 1 teaspoon vanilla extract (optional)
  • 1/3 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, and 1 teaspoon ground cinnamon. Mix gently and set aside for about 10 minutes.
  3. In another bowl, combine rolled oats, flour, brown sugar, 1 teaspoon ground cinnamon, and salt. Add chilled butter cubes and cut into the dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. If using, stir in vanilla extract and chopped nuts into the crumble mixture.
  5. Pour the peach mixture evenly into the prepared baking dish. Sprinkle the oat crumble topping evenly over the peaches.
  6. Bake for 35 to 40 minutes until the topping is golden brown and the peach filling is bubbling around the edges.
  7. Cool for at least 15 minutes before serving to allow the filling to thicken.

Notes

If topping browns too quickly, tent loosely with foil halfway through baking. For easier peeling, dip peaches in boiling water for 30 seconds. Keep butter cold for best crumble texture. Let peach mixture sit 10 minutes before baking to develop flavors. Avoid stirring crisp while baking to maintain crust.
