This easy apple crisp features a jammy apple filling, a crunchy oat streusel, and a salted caramel swirl. It’s the perfect cozy dessert for any night of the week.

  • 67 medium apples (about 2.5 lbs or 1.1 kg), a mix of Granny Smith and Honeycrisp
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (90g) old-fashioned rolled oats
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (60g) chopped pecans or walnuts (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g or 1 stick) unsalted butter, cold and cut into small cubes
  • 1/2 cup (120ml) good quality salted caramel sauce
  • Flaky sea salt for finishing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8 or 9×9 inch baking dish. Place a baking sheet on the rack below to catch drips.
  2. In a large bowl, combine rolled oats, 1/2 cup flour, brown sugar, 1/4 cup granulated sugar, chopped nuts (if using), 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Whisk to combine. Add cold cubed butter and cut in with a pastry cutter or fingertips until mixture resembles coarse sand with some pea-sized butter lumps. Refrigerate while preparing apples.
  3. Peel, core, and slice apples into 1/4-inch thick slices. In a medium bowl, toss apple slices with 1/4 cup granulated sugar, 2 tablespoons flour, lemon juice, 1 teaspoon cinnamon, nutmeg, and 1/4 teaspoon salt until coated.
  4. Pour apple mixture into prepared dish and spread evenly. Drizzle about 1/3 cup of salted caramel sauce over apples. Sprinkle chilled streusel evenly over top, squeezing some into larger clusters.
  5. Bake for 40-45 minutes, until filling is bubbly and streusel is deep golden brown. If topping browns too quickly, tent with foil after 30 minutes. Let rest for at least 10 minutes.
  6. Just before serving, drizzle remaining salted caramel sauce over top and sprinkle generously with flaky sea salt.

Notes

Chill the streusel before baking to prevent it from melting. Use firm, tart-sweet apples like Granny Smith or Honeycrisp. Let the crisp rest for 10 minutes after baking to allow juices to thicken.
