Ingredients

  • Whole chicken (3-4 lbs / 1.4-1.8 kg), fresh or thawed, preferably organic or free-range
  • Olive oil (2-3 tbsp)
  • Garlic (4 cloves, minced)
  • Fresh rosemary (2 sprigs)
  • Fresh thyme (3-4 sprigs)
  • Lemon (1, halved)
  • Salt (1 tbsp kosher salt)
  • Black pepper (1 tsp, freshly cracked)
  • Onion (1 small, quartered, optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to warm up for 10 minutes.
  2. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.
  3. In a small bowl, combine 2-3 tablespoons olive oil, minced garlic, salt, cracked black pepper, and finely chopped rosemary and thyme leaves (reserve sprigs for the cavity).
  4. Rub the olive oil mixture all over the chicken skin, including under the wings and legs.
  5. Stuff the cavity with lemon halves, onion quarters, and reserved herb sprigs.
  6. Truss the chicken legs together with kitchen twine or tuck the wings under the body if twine is unavailable.
  7. Place the chicken breast-side up on a roasting rack or oven-safe dish. Optionally drizzle a little more olive oil over the top.
  8. Roast for about 1 hour 10 minutes (70-75 minutes), or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
  9. Baste the chicken halfway through cooking with pan juices to keep the skin moist and flavorful.
  10. Remove from oven and tent loosely with foil. Let rest for 15 minutes before carving.
