This creamy, dreamy cheesecake dip comes together in just five minutes with simple pantry ingredients. It’s the perfect no-bake dessert for fall gatherings, game day, or any occasion where you want something impressive without the effort.

Ingredients

Scale
  • 16 ounces cream cheese, softened
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1/2 cup caramel sauce, divided
  • 1 pinch coarse sea salt
  • For serving: fresh apple slices (Granny Smith or Honeycrisp), graham crackers, pretzel sticks, or shortbread cookies

Instructions

  1. Soften the cream cheese: Take cream cheese out of refrigerator at least 30 minutes before starting. Unwrap and cut into cubes to speed up softening. If in a hurry, microwave in 10-second bursts until soft but not warm.
  2. Beat the cream cheese: Place softened cream cheese in a large mixing bowl. Beat with an electric hand mixer on medium speed for about 2 minutes until completely smooth, light, and fluffy. Scrape down sides and bottom of bowl with a rubber spatula.
  3. Add brown sugar and vanilla: Add packed brown sugar and vanilla extract. Beat on medium speed for 1-2 minutes until sugar is fully incorporated and mixture is smooth and slightly lighter in color.
  4. Pour in heavy cream: With mixer running on low speed, slowly pour in heavy cream. Increase speed to medium and beat for about 1 minute until mixture is light, airy, and spoonable. It should hold soft peaks when beaters are lifted.
  5. Fold in caramel sauce: Measure out 1/3 cup of caramel sauce, set remaining aside for topping. Pour over cream cheese mixture and gently fold with a rubber spatula until evenly distributed with thin ribbons of caramel throughout. Do not overmix.
  6. Season with salt: Sprinkle a tiny pinch of coarse sea salt over top and fold in gently. Taste and add another pinch if desired.
  7. Transfer to serving bowl: Scoop dip into serving bowl and spread into an even layer. Drizzle remaining caramel sauce over top in a zigzag pattern or concentric circles. Sprinkle another tiny pinch of sea salt over caramel drizzle.
  8. Prepare apples: Right before serving, slice apples into wedges about 1/2-inch thick at widest part. If making ahead, toss apple slices in a bowl with a squeeze of lemon juice and a splash of cold water. Drain well before serving.
  9. Arrange and serve: Arrange apple slices, graham crackers, pretzels, or cookies around dip on a large platter. Serve immediately at room temperature.

Notes

Room temperature cream cheese is essential for a smooth texture. Do not overwhip the cream cheese. Let dip rest for 10 minutes before serving for best flavor. Dip can be made up to 24 hours in advance; store covered in refrigerator and let sit at room temperature for 20 minutes before serving. Not recommended for freezing.
