  • 45 medium large yellow onions, sliced into half-moons
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 2 cups Gruyère cheese, freshly grated
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard

Instructions

  1. Peel and slice onions into thin half-moons. Place in a large bowl.
  2. Heat butter and olive oil in a heavy-bottomed skillet over medium-low heat. Once butter foams, add onions and salt. Toss to coat.
  3. Let onions sit undisturbed for 10 minutes to allow moisture to evaporate.
  4. Stir onions. Continue cooking, stirring every 5-10 minutes, for 30-50 minutes until dark brown and jammy. Add a splash of water if they stick.
  5. Stir in minced garlic, balsamic vinegar, and thyme. Cook for 2 minutes until fragrant. Remove skillet from heat.
  6. In a small saucepan, gently warm heavy cream over low heat (do not boil).
  7. Remove cream from heat and whisk in Dijon mustard. Gradually add grated Gruyère, whisking constantly until smooth and melted.
  8. Pour cheese sauce over caramelized onions. Stir gently to combine. Adjust seasoning with salt or pepper if needed.
  9. Serve warm.

Notes

Use real block Gruyère and shred it yourself for best melting results. Keep heat low and slow to prevent burning the onions. If the dip is too thick, add a splash of cream. If too thin, let it sit to thicken. Serve warm; cheese solidifies when cold.
