  • 1 cup Gruyère cheese, freshly grated
  • 4 ounces cream cheese, softened
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a medium saucepan over medium-low heat. Sprinkle in flour and whisk constantly for 2 minutes until the mixture is light golden and nutty.
  2. Slowly pour in the German lager while whisking continuously to create a smooth, thin gravy-like consistency.
  3. Stir in Dijon mustard, Worcestershire sauce, garlic powder, paprika, cayenne pepper, salt, and black pepper. Simmer gently for 1 minute.
  4. Reduce heat to low. Add softened cream cheese in small cubes and whisk until completely melted and incorporated.
  5. Add grated cheddar and Gruyère cheese a handful at a time, whisking gently but constantly until each addition is melted. Do not boil.
  6. Taste and adjust seasoning. If too thick, add a splash of beer or milk. If too thin, simmer briefly or add a cornstarch slurry. Remove from heat.
