Creamy Instant Pot Chicken and Wild Rice Soup (Easy One-Pot Meal)

A creamy, comforting chicken and wild rice soup made entirely in the Instant Pot. This one-pot meal is perfect for busy weeknights, featuring tender chicken, earthy wild rice, and a rich, savory broth.

  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 1 cup (180g) wild rice, rinsed
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups (960ml) low-sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (28g) butter
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: dice onion, carrots, and celery; mince garlic; rinse wild rice; measure broth and seasonings.
  2. Turn Instant Pot to Sautรฉ mode on High. Add butter and let melt.
  3. Season chicken thighs with salt and pepper. Brown in the pot for 3-4 minutes per side until golden. Remove to a plate.
  4. Add onion, carrots, and celery to the pot. Cook 4-5 minutes until onions are translucent, scraping up browned bits. Add garlic and cook 30 seconds.
  5. Deglaze the pot with 1/2 cup chicken broth, scraping up any stuck-on bits.
  6. Add remaining broth, rinsed wild rice, thyme, rosemary, and bay leaves. Stir. Nestle chicken thighs back into the liquid.
  7. Close lid, set valve to Sealing. Cook on Manual/High Pressure for 25 minutes.
  8. When timer beeps, let pressure release naturally for 10 minutes, then quick release remaining steam.
  9. Remove chicken to a cutting board and shred with two forks. Discard bay leaves. Return shredded chicken to the pot.
  10. Turn off Instant Pot. Stir in heavy cream. Taste and adjust salt and pepper. If too thick, add a splash of broth or milk.
  11. Ladle into bowls and garnish with fresh parsley. Serve hot with crusty bread.

Notes

For a dairy-free version, substitute full-fat coconut milk for heavy cream. For a vegetarian version, skip the chicken and use vegetable broth, adding chickpeas or white beans. The soup thickens as it sits; add extra broth when reheating. Freeze before adding cream for best results.
