Creamy Instant Pot Lasagna Soup with Ricotta

A quick and easy one-pot comfort food that captures the flavors of classic lasagna without the labor. This creamy soup features Italian sausage, tender noodles, and a smooth ricotta mixture, ready in under 45 minutes.

  • 1 lb sweet Italian sausage (casings removed)
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 3 cups low-sodium chicken broth
  • 1 (15 oz) container whole milk ricotta cheese
  • 2 tbsp unsalted butter
  • 1/2 cup heavy cream (optional)
  • 1 tsp dried oregano
  • 810 broken pieces uncooked lasagna noodles
  • 1/2 cup freshly grated parmesan cheese
  • 1 egg
  • Salt and black pepper to taste

Instructions

  1. Turn Instant Pot to ‘Sauté’ mode. Melt butter, then add diced onion and cook until soft (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground Italian sausage to the pot. Break it up and cook until browned (5-6 minutes). Stir in dried oregano and cook for 30 seconds.
  3. Pour in marinara sauce and chicken broth. Scrape the bottom of the pot to release any browned bits to prevent burning.
  4. Add broken lasagna noodles, ensuring they are submerged. Secure lid, set valve to ‘Sealing’, and pressure cook on High for 8 minutes.
  5. Allow pressure to release naturally for 10 minutes, then carefully vent remaining pressure.
  6. While the pot releases, whisk ricotta, one egg, half the parmesan, and a pinch of salt and pepper in a small bowl.
  7. Open the lid. Stir in heavy cream if using. Turn pot to ‘Sauté’ on Low or ‘Keep Warm’. Slowly stir in the ricotta mixture, a ladleful at a time, whisking constantly to temper the cheese.
  8. Taste and season with salt and black pepper. If too thick, add more broth. Serve topped with remaining parmesan and fresh basil.

Notes

Scrape the bottom of the pot thoroughly to avoid the ‘Burn’ error. Temper the ricotta by adding it slowly while whisking to prevent clumping. If using watery ricotta, drain it in a strainer for 10 minutes before use. For a lighter version, substitute turkey sausage and skip the heavy cream.
