  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream
  • 1/3 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • A pinch of cayenne pepper
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (for glaze)
  • 1 tablespoon brown sugar (for glaze)
  • 1 tablespoon bourbon (optional, for glaze)
  • 1/2 cup pecans or walnuts, chopped (optional topping)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Place cubed sweet potatoes in a large saucepan, cover with cold water by an inch, add a pinch of salt, and bring to a boil. Reduce to a simmer and cook for 12-15 minutes until tender but not mushy.
  3. Drain potatoes in a colander and let them steam dry for a minute. Return to the warm pot and let sit for 2 minutes to remove excess moisture.
  4. Transfer hot potatoes to a food processor. Add softened butter, heavy cream, maple syrup, 2 tablespoons bourbon, brown sugar, cinnamon, salt, cayenne, and vanilla. Process until completely smooth.
  5. Pour the mixture into a 9×9 inch baking dish and smooth the top.
  6. In a small saucepan, melt 2 tablespoons butter with 1 tablespoon brown sugar over medium-low heat until dissolved. Stir in optional bourbon.
  7. Pour the warm glaze over the potato mixture. Sprinkle with nuts if using.
  8. Bake for 20-25 minutes until bubbly and slightly caramelized.
  9. Cool for 10 minutes before serving.

Notes

For best results, use fresh sweet potatoes rather than canned. Ensure potatoes are dried well after boiling to prevent a watery texture. The puree can be made up to 24 hours in advance and stored in the fridge.
