  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and black pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/3 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup low sodium chicken broth
  • 3/4 cup heavy cream (can substitute half-and-half for lighter option)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil leaves, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and black pepper. (5 minutes)
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Wait until the oil shimmers but does not smoke. (2 minutes)
  3. Add the chicken breasts to the hot pan and cook undisturbed for about 5 minutes until golden brown on the bottom. Flip and cook another 4-5 minutes until cooked through and juicy. Remove chicken and set aside. (10 minutes)
  4. Lower heat to medium. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until fragrant. (2 minutes)
  5. Pour in 1 cup chicken broth, scraping the bottom of the pan to loosen browned bits. Stir in dried Italian herbs and optional red pepper flakes. Simmer gently for 3-4 minutes to reduce slightly. (4 minutes)
  6. Lower heat to medium-low and stir in heavy cream and grated Parmesan. Stir continuously until cheese melts and sauce thickens slightly, about 3-5 minutes. (5 minutes)
  7. Return chicken breasts to the skillet, spoon sauce over them, and simmer together for 2-3 minutes so chicken absorbs the sauce. (3 minutes)
  8. Sprinkle chopped fresh basil over the dish just before serving. (1 minute)

Notes

Do not overcrowd the pan when searing chicken; cook in batches if needed. Use oil-packed sun-dried tomatoes for best flavor. Simmer sauce slowly to prevent cream from curdling. If sauce thickens too much, add a splash of broth or cream to loosen. Chicken is done at internal temperature of 165°F (74°C). Freshly grated Parmesan melts better than pre-grated. For dairy-free, substitute heavy cream with canned coconut milk and omit Parmesan.
