  • 1 cup (240ml) milk (whole, almond, oat, or coconut)
  • 1/4 cup (65g) creamy peanut butter
  • 1 large ripe banana
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, 1 tablespoon dark chocolate chips, chopped peanuts, cinnamon

Instructions

  1. Mash the banana in a medium mixing bowl until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Whisk until smooth and creamy, about 30 seconds.
  3. Stir in the rolled oats, chia seeds, and a pinch of salt until all oats are coated and no dry patches remain.
  4. Divide the mixture evenly into two mason jars or airtight containers, leaving about an inch of space at the top.
  5. Add toppings: slice the remaining half banana and divide between jars, drizzle extra peanut butter, and add cinnamon or chocolate chips if desired. Press toppings down gently.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. In the morning, stir and enjoy cold, or microwave for 30-45 seconds if desired.

Notes

Use old-fashioned rolled oats for best texture. Mash half the banana into the base for creaminess. Chia seeds are key for pudding-like texture. Adjust sweetness to taste. Store in fridge for up to 5 days. Do not freeze.
