A thick, creamy, and satisfying overnight oatmeal made with just a few pantry staples. This recipe focuses on texture, creating a custard-like consistency that is perfect for busy mornings and meal prep.

Ingredients

Scale
  • 1 cup (90g) Old-Fashioned Rolled Oats
  • 1 cup (240ml) Milk of Choice (dairy, almond, or oat)
  • 2 tablespoons Creamy Peanut Butter
  • 1 medium Ripe Banana, mashed
  • 1 tablespoon Honey or Maple Syrup
  • 1 teaspoon Chia Seeds (optional)
  • 1/8 teaspoon Salt

Instructions

  1. Mash the ripe banana in a mason jar or mixing bowl until mostly smooth with small chunks.
  2. Add the milk, peanut butter, honey, salt, and chia seeds (if using) to the jar.
  3. Whisk or stir the wet ingredients vigorously to emulsify the peanut butter into the milk until the mixture is uniform and creamy.
  4. Add the rolled oats and stir gently to ensure all oats are submerged in the liquid.
  5. Seal the jar tightly and shake well to mix everything one last time.
  6. Refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  7. Before serving, stir the oats. If too thick, add a splash of milk. Top with extra banana or peanut butter if desired and eat cold.

Notes

Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. Ensure the banana is ripe (brown spots) for natural sweetness and thickening. If using protein powder, add extra milk as it absorbs liquid. Store in the refrigerator for up to 5 days.
