This creamy peanut butter banana overnight oats recipe is a quick, no-cook breakfast that takes just 5 minutes to prepare. Made with simple pantry ingredients, it’s a crowd-pleaser that keeps you full and satisfied.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 large ripe banana (about 120g mashed)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk of choice
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (15ml) maple syrup or honey
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • Optional toppings: sliced banana, extra peanut butter, cinnamon, chopped peanuts, dark chocolate chips, Greek yogurt

Instructions

  1. Mash the banana in a medium mixing bowl until smooth with a few small lumps.
  2. Add the peanut butter and stir until fully combined into a thick paste.
  3. Pour in the milk and whisk until the peanut butter and banana mixture is fully dissolved.
  4. Add the maple syrup or honey and vanilla extract, then stir well. Taste and adjust sweetness if needed.
  5. Stir in the rolled oats and chia seeds until evenly distributed. Ensure oats are fully submerged; add a splash more milk if needed.
  6. Sprinkle in the salt and give one final stir.
  7. Divide the mixture evenly into two pint-sized mason jars or one large airtight container, leaving about an inch of headspace.
  8. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  9. In the morning, stir the oats. If too thick, add a tablespoon or two of milk. Add desired toppings.
  10. Serve cold or warm (microwave for 45-60 seconds if desired).

Notes

Use ripe spotty bananas for best sweetness. Stir halfway through soaking time for even texture. Toast oats at 350°F for 8-10 minutes for deeper flavor. Oats keep in fridge up to 5 days and can be frozen for up to 2 months.
