  • 4 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: Toasted pecans or pumpkin seeds for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a 13×18 inch rimmed baking sheet with parchment paper.
  2. Rinse and dry the delicata squash. Cut off both ends, slice in half crosswise, and scoop out seeds and pulp.
  3. Slice each half into ½-inch thick rounds and place them on the prepared baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly, ensuring slices are in a single layer.
  5. Roast for 20 minutes, then flip each slice. Roast for another 10-15 minutes until edges are golden brown and flesh is tender.
  6. While squash roasts, melt butter in a small saucepan over medium heat. Stir constantly until it turns deep amber and smells nutty (3-5 minutes). Remove from heat immediately.
  7. Whisk maple syrup into the hot brown butter until combined.
  8. Pour the maple brown butter over the roasted squash and toss to coat. Return to oven for 1-2 minutes to meld flavors.
  9. Serve immediately, optionally garnished with toasted nuts.

Notes

Do not crowd the pan; squash needs space to roast rather than steam. Brown butter can burn quickly, so watch it closely. The skin is edible and becomes tender when roasted. For a vegan version, substitute butter with olive oil or plant-based butter.
