A quick and easy creamy stew featuring smoky roasted Hatch chilies, tender chicken, and white beans, perfect for cozy dinners and last-minute meals.

  • 2 cups roasted Hatch chilies, peeled and chopped (about 68 medium chilies)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups cooked white beans (cannellini or Great Northern), drained and rinsed if canned
  • 3 cups low-sodium chicken broth
  • 1/2 cup plain Greek yogurt or sour cream
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: chopped fresh cilantro or parsley, fresh lime wedges, crumbled queso fresco or shredded cheddar

Instructions

  1. Preheat broiler on high. Place whole Hatch chilies on a foil-lined baking sheet and broil 5-7 minutes per side until skins are blackened and blistered.
  2. Remove chilies from oven and place in a heatproof bowl; cover tightly with plastic wrap or kitchen towel to steam for 10 minutes.
  3. Peel skins off chilies, remove seeds and stems, then chop coarsely and set aside.
  4. Heat olive oil in a Dutch oven over medium heat. Add diced onions and cook until translucent, about 5 minutes.
  5. Stir in minced garlic, cumin, and smoked paprika; cook 1-2 minutes until fragrant, being careful not to burn the garlic.
  6. Add chicken pieces, season lightly with salt and pepper, and cook until browned on all sides but not fully cooked through, about 6-8 minutes.
  7. Stir in chopped Hatch chilies and white beans. Pour in chicken broth and bring to a gentle simmer.
  8. Reduce heat to low, cover, and cook for 15 minutes to allow flavors to meld and chicken to cook through.
  9. Using an immersion blender, puree about one-third of the stew in the pot to create a creamy base. Alternatively, transfer a cup to a blender, puree, and stir back in.
  10. Remove stew from heat and gently stir in Greek yogurt or sour cream to avoid curdling. Adjust seasoning with salt and pepper to taste.
  11. Ladle stew into bowls and garnish with fresh cilantro, a squeeze of lime, and crumbled cheese if desired. Serve warm.

Notes

Do not skip steaming the chilies after roasting to make peeling easier and preserve smoky flavor. Temper yogurt by stirring in a bit of hot broth before adding to stew to prevent curdling. Adjust thickness by adding broth or simmering longer. For vegetarian or vegan versions, substitute chicken with vegetables or plant-based protein and use vegetable broth and dairy-free yogurt.
