  • 1 cup (2 sticks) unsalted butter
  • 1 1/2 cups packed brown sugar
  • 1/4 to 1/2 cup 100% pure pumpkin puree
  • 1/4 cup heavy cream
  • 23 tablespoons pumpkin pie spice
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 250ยฐF (120ยฐC). Line two large baking sheets with parchment paper.
  2. Place the Chex cereal into a large mixing bowl and set aside.
  3. In a large heavy-bottomed saucepan, melt the butter over medium heat until liquid and foaming (3-4 minutes).
  4. Add the brown sugar and pumpkin puree to the melted butter. Whisk vigorously until smooth and lump-free.
  5. Add the heavy cream, pumpkin pie spice, and salt. Stir to combine.
  6. Turn heat to medium-high and bring the mixture to a boil, watching closely as it bubbles up.
  7. Once boiling, reduce heat to medium-low and simmer for 5 minutes, stirring frequently, until the sauce thickens slightly but remains pourable.
  8. Remove the pan from heat and stir in the vanilla extract.
  9. Pour the warm caramel sauce over the Chex cereal. Use a silicone spatula to gently fold the cereal, ensuring every piece is coated.
  10. Divide the coated cereal evenly between the two prepared baking sheets, spreading into a single layer.
  11. Bake for 30 minutes. At the 15-minute mark, remove sheets and stir thoroughly to ensure even drying.
  12. Return to oven for the remaining 15 minutes.
  13. Remove from oven and let cool completely on the pans. The mix will crisp up as it cools.
  14. Break up any large clumps and serve.

Notes

Ensure pumpkin puree is at room temperature to prevent the caramel from seizing. Do not use pumpkin pie filling. For best crunch, store in an airtight container at room temperature. The mix tastes better after a day or two as flavors meld. Can be frozen for up to three months.
