A comforting and creamy Tuscan-inspired soup featuring Italian sausage, white beans, spinach, and sun-dried tomatoes, slow-cooked to perfection in a crockpot.

  • 1 pound (450g) Italian sausage, mild or spicy
  • 2 cans (15 oz each / 425g) cannellini beans, drained and rinsed
  • 4 cups (950 ml) chicken broth, low sodium preferred
  • 3 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • ½ cup chopped sun-dried tomatoes
  • 4 cups packed (about 120g) fresh spinach
  • ½ cup (120 ml) heavy cream (optional, can substitute coconut cream for dairy-free)
  • ½ cup (50g) grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add Italian sausage, breaking it up with a spoon. Cook about 6-8 minutes until browned and cooked through. Drain excess fat if needed.
  2. In the same skillet, add chopped yellow onion and minced garlic. Cook 3-4 minutes until softened and fragrant, stirring often.
  3. Transfer browned sausage, onions, and garlic to the crockpot. Add drained and rinsed cannellini beans, chicken broth, chopped sun-dried tomatoes, dried Italian herbs, and red pepper flakes if using. Stir to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beans are tender and flavors melded.
  5. About 15 minutes before serving, stir in fresh spinach and heavy cream. Cover and cook until spinach wilts.
  6. Stir in grated Parmesan cheese. Taste and season with salt and black pepper as needed.
  7. Ladle soup into bowls and serve hot, optionally with crusty bread or your favorite side.

Notes

Brown the sausage well for better texture and flavor. Rinse canned beans to remove excess starch and salt. Add spinach and cream near the end to keep color and texture vibrant. Adjust seasoning after cooking. If soup is too thick after adding cream, add more broth or water. Use fresh Parmesan cheese for best melting and flavor. For stovetop method, simmer gently for about 45 minutes, adding spinach and cream in the last 10 minutes.
