Crispy Bacon-Wrapped Smokies Easy Brown Sugar Glaze Recipe

These crispy bacon-wrapped smokies with a sticky brown sugar glaze are the ultimate party appetizer. Perfectly salty-sweet and irresistibly snackable, they disappear every time.

  • 1 package (14 ounces) little smokies sausages
  • 1 pound thin-cut bacon
  • 1 cup packed light brown sugar
  • 2 tablespoons maple syrup (optional)
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Par-cook the bacon: Lay the bacon slices on a microwave-safe plate lined with paper towels. Cover with another paper towel and microwave on high for 2 to 3 minutes, until the bacon is partially cooked but still pliable.
  3. Cut the bacon slices in half crosswise. Each half should be about 3 to 4 inches long.
  4. Wrap the smokies: Take one little smokie and place it at the end of a bacon half. Roll it up snugly, making sure the bacon overlaps slightly. Secure the end with a toothpick pushed through the bacon and into the smokie. Repeat with all the smokies.
  5. Arrange on the wire rack: Place the wrapped smokies on the wire rack set inside the baking sheet, leaving a little space between each one.
  6. Make the glaze: In a small bowl, mix together the brown sugar, maple syrup (if using), smoked paprika, cayenne (if using), and a pinch of salt. Stir until it forms a thick, sandy paste.
  7. Apply the first glaze coat: Using a pastry brush or the back of a spoon, spread a thin, even layer of the glaze over each bacon-wrapped smokie.
  8. Bake for 15 minutes.
  9. Flip and apply the second glaze coat: Remove the baking sheet from the oven. Using tongs, carefully flip each smokie over. Apply another thin layer of the remaining glaze to the exposed side. Return to the oven.
  10. Bake for another 10 to 15 minutes, until the bacon is deep golden brown and crispy, and the glaze is bubbling and caramelized.
  11. Let them rest: Remove the baking sheet from the oven and let the smokies cool on the wire rack for 5 minutes.
  12. Serve warm or at room temperature. Transfer the smokies to a serving platter. Remove the toothpicks before serving if you prefer, or leave them in for easy grabbing.

Notes

Soak wooden toothpicks in water for 10 minutes before using to prevent burning. Do not skip par-cooking the bacon for best crispiness. Let the smokies rest for 5 minutes after baking to allow the glaze to set.
