  • 68 ounces Brie cheese, sliced or cubed
  • 1/2 to 3/4 cup cranberry sauce (whole berry or smooth)
  • 1 large egg, beaten with 1 tablespoon water
  • 1 tablespoon unsalted butter, softened
  • Sesame seeds (optional, for topping)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry sheets into roughly 12×12 inch squares, smoothing out wrinkles.
  3. Spread a thin, even layer of Brie over the first pastry sheet, leaving a half-inch border.
  4. Spoon small dollops of cranberry sauce (about 1 teaspoon per bite) over the Brie.
  5. Place the second pastry sheet on top and press edges firmly to seal. Crimp edges with a fork.
  6. Cut the pastry into 16 equal squares (or 9 for larger bites) and place on the baking sheet.
  7. Brush tops with egg wash and sprinkle with sesame seeds if using.
  8. Bake for 15-18 minutes until puffed and golden brown.
  9. Cool on the baking sheet for 5 minutes before serving.

Notes

Ensure puff pastry remains cold to achieve flakiness. Do not overfill with sauce to prevent sogginess. For best results, serve warm. Leftovers can be reheated in the oven at 350°F for 5-7 minutes.
