Instructions

  1. Prep your green beans. Wash them thoroughly under cold water, then pat them completely dry with paper towels or a clean kitchen towel. Trim the stem ends off each bean. You can leave the pointed tails on for a more rustic look.
  2. Toast the almonds. Place your large skillet over medium heat. Add the slivered almonds and cook, stirring frequently, for 2-3 minutes until they’re fragrant and lightly golden. Transfer to a small plate or bowl and set aside.
  3. Start cooking the beans. In the same skillet, add the olive oil and turn the heat to medium-high. Let the oil heat for about 30 seconds until it shimmers. Add the green beans in a single layer if possible. Let them cook without stirring for 2 minutes to develop some color.
  4. Add the garlic. Toss in the thinly sliced garlic and stir everything together. Cook for another 3-4 minutes, stirring occasionally, until the beans are crisp-tender and starting to get some browned spots.
  5. Finish with butter and almonds. Reduce the heat to medium-low. Add the butter to the skillet and let it melt, stirring to coat the beans. Then add the toasted almonds back in and toss everything together. Cook for another minute until everything is well combined and heated through.
  6. Add the herbs and lemon. In a small bowl, combine the chopped parsley, thyme leaves, lemon juice, salt, and pepper. Pour this mixture over the beans and stir well to coat every bean. If using red pepper flakes, add them now. Cook for just 30 seconds more, then remove from heat.
