  • 1/2 cup (120g) sour cream
  • 1/4 cup (60g) mayonnaise
  • 1/3 cup (75g) crumbled blue cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • Freshly ground black pepper, to taste
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  1. Pat the chicken wings dry with paper towels to remove excess moisture (about 5 minutes).
  2. Toss wings in a large bowl with olive oil, salt, black pepper, smoked paprika, and garlic powder until evenly coated. Set aside while you preheat the grill.
  3. Heat your grill to medium-high (about 375-400°F / 190-205°C). If using charcoal, wait until the coals are covered with white ash.
  4. Arrange wings skin-side down on the grill grates. Cook for 10 minutes without moving them to develop a good sear and crispy skin.
  5. Turn wings over and grill for another 8-10 minutes. Watch for flare-ups; move wings if they start charring too quickly.
  6. Brush wings generously with the BBQ sauce mixture (BBQ sauce, honey, apple cider vinegar, cayenne pepper). Flip and baste the other side. Grill for an additional 4-5 minutes, turning and basting once more. Wings should reach an internal temperature of 165°F (74°C).
  7. While wings finish, combine sour cream, mayonnaise, crumbled blue cheese, lemon juice, Worcestershire sauce, and black pepper in a bowl. Stir gently and refrigerate until ready to serve.
  8. Remove wings from the grill and let them rest for 5 minutes. Garnish the dip with fresh herbs and serve alongside the wings.
