These crispy loaded bacon cheddar potato skins are the ultimate game day appetizer. With a double-baked method for perfect crunch, sharp cheddar, and smoky bacon, they disappear before the first quarter ends.

  • 6 medium Russet potatoes
  • 12 slices thick-cut bacon
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 45 green onions, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment.
  2. Scrub and dry potatoes. Prick each with a fork. Bake for 50-60 minutes until tender. Let cool 10 minutes.
  3. While potatoes bake, cook bacon on a foil-lined sheet at 400°F for 15-18 minutes until crispy. Drain and crumble.
  4. Cut each potato in half lengthwise. Scoop out flesh, leaving ¼ inch attached to skin.
  5. Brush both sides of shells with melted butter mixture (butter, garlic powder, salt, pepper). Place skin-side up on a wire rack over a baking sheet.
  6. Bake shells for 10 minutes. Flip and bake another 10 minutes until golden and crispy.
  7. Flip shells skin-side down. Fill each with shredded cheddar and crumbled bacon.
  8. Bake 5-7 minutes until cheese is melted and bubbly.
  9. Let cool 2-3 minutes. Top with sour cream and green onions. Serve immediately.

Notes

For extra crispiness, use a wire rack for the second bake. Shred cheese from a block for best melting. Bake shells a day ahead and store in fridge for easy prep. Reheat leftovers in a 375°F oven, not microwave.
