These crispy maple roasted delicata squash rings are a perfect fall side dish—tender squash with caramelized, crispy edges, glazed with maple syrup and roasted to perfection. Simple enough for a weeknight, impressive enough for a holiday table.

  • 1 medium delicata squash (about 1 to 1.5 pounds)
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cinnamon or cayenne pepper
  • Optional: Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly, pat dry, trim off both ends, and slice crosswise into 1/2-inch thick rings. Remove seeds with your finger or a small spoon.
  3. In a small bowl, whisk together olive oil, maple syrup, salt, pepper, and cinnamon or cayenne (if using).
  4. Place squash rings in a large bowl, pour the maple mixture over them, and toss gently until evenly coated.
  5. Arrange rings in a single layer on the prepared baking sheet, leaving space between each ring. Drizzle any remaining glaze over the top.
  6. Roast for 15 minutes without disturbing.
  7. Flip each ring carefully with a thin spatula, then roast for another 10 to 15 minutes until deeply golden and edges are crispy.
  8. Remove from oven, let cool on the baking sheet for 2 to 3 minutes. Transfer to a platter, sprinkle with flaky sea salt if desired, and serve warm.

Notes

Don’t crowd the pan—rings need space to get crispy. Slice evenly for consistent cooking. Use a hot oven (425°F) for proper caramelization. Let rings rest for 2-3 minutes after roasting to set the glaze. For best texture, serve within 15 minutes of roasting.
