  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ยฝ teaspoons ground cinnamon
  • ยฝ teaspoon ground ginger
  • ยผ teaspoon ground nutmeg
  • 1 cup powdered sugar, sifted
  • 12 tablespoons milk (dairy or non-dairy)
  • ยฝ teaspoon cinnamon
  • 1 teaspoon apple cider syrup (reserved from reduction)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan with a cinnamon stick. Bring to a boil over medium-high heat, then reduce to medium-low. Simmer for 15-20 minutes until reduced to about ยผ cup and coating the back of a spoon. Remove cinnamon stick and let cool completely.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Mix in the vegetable oil, vanilla extract, and the cooled apple cider syrup. Whisk until smooth.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed or by hand until just combined. Do not overmix.
  6. Cover the dough and refrigerate for 30 minutes to prevent excessive spreading.
  7. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  8. Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheets.
  9. Bake for 10-12 minutes until edges are golden brown and centers look slightly set. They will crisp up as they cool.
  10. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Whisk powdered sugar, milk, cinnamon, and 1 teaspoon of reserved cider syrup until smooth. Drizzle over cooled cookies.
