Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper and brush it lightly with olive oil. Set aside.
  2. Using the large holes of a box grater, shred the 3 medium zucchini. You should have about 4 cups of shredded zucchini.

  5. In the same bowl (wiped dry), combine 1 cup freshly grated Parmesan cheese, ½ cup panko breadcrumbs, 2 minced garlic cloves, 1 teaspoon dried oregano, and ½ teaspoon black pepper. Stir with a fork until evenly distributed.
  6. Add the squeezed zucchini and 2 lightly beaten eggs to the bowl. Mix with a fork or hands until well combined. The mixture should be moist but not wet, holding together when pressed.
