These crispy zucchini fritters feature a golden Parmesan crust paired with a tangy garlic herb yogurt sauce, making a quick and delicious snack or appetizer.

  • 3 medium zucchinis (about 1 pound / 450 grams), grated
  • ½ cup (50 grams) finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • ½ cup (60 grams) all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper, to taste
  • 23 tablespoons olive oil (or neutral oil like canola) for frying
  • For the garlic herb yogurt sauce:
  • ½ cup (120 grams) plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon fresh lemon juice
  • Salt and pepper, to taste

Instructions

  1. Wash and trim the zucchinis. Grate finely using a box grater or food processor to yield about 3 cups (300 grams) grated zucchini.
  2. Place grated zucchini in a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much moisture as possible.
  3. In a large mixing bowl, combine grated zucchini, Parmesan, flour, beaten eggs, minced garlic, chopped parsley and dill. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Mix until well combined. If too wet, add a bit more flour.
  4. Heat a large skillet over medium heat and add 2 tablespoons olive oil. Warm until shimmering but not smoking.
  5. Using about 2 tablespoons of batter per fritter, drop spoonfuls into hot oil and gently flatten to form 3-inch rounds. Cook 3-4 minutes per side until golden brown and crispy. Fry in batches to avoid overcrowding.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven (200°F / 95°C) while frying remaining batter.
  7. Prepare the garlic herb yogurt sauce by stirring together Greek yogurt, minced garlic, parsley, chives, lemon juice, salt, and pepper in a small bowl. Refrigerate until serving.
  8. Serve fritters warm with a dollop or drizzle of garlic herb yogurt sauce.

Notes

Squeeze out as much moisture from the zucchini as possible to avoid soggy fritters. Use freshly grated Parmesan for best crispiness. Fry at medium heat to cook through without burning. Let batter rest 10 minutes if too loose. Flip fritters gently once edges are set and bottoms are golden. Can bake at 425°F for 15-20 minutes as a healthier alternative.
