A quick and festive fall dessert that combines classic Rice Krispies with toasted candy corn for a chewy, crunchy, and colorful treat perfect for Halloween or autumn gatherings.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 10 ounces large marshmallows (about 4 cups)
  • 6 cups Rice Krispies cereal
  • 1 cup candy corn
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease with butter or non-stick spray.
  2. In a large pot over medium-low heat, melt the 3 tablespoons of butter, stirring constantly until fully melted.
  3. Add the 10 ounces of marshmallows to the melted butter. Stir gently and continuously for 3-5 minutes until completely melted and smooth.
  4. Remove the pot from the heat and immediately add the 6 cups of Rice Krispies cereal. Fold gently but thoroughly to coat every piece.
  5. Gently fold in the 1 cup of candy corn, being careful not to crush the pieces.
  6. Transfer the mixture into the prepared pan. Use a greased spatula or hands to press the mixture evenly into an even layer about 1 inch thick.
  7. Let the treats cool at room temperature for at least 30 minutes.
  8. Lift the pan out using the parchment overhang and cut into squares using a sharp knife.

Notes

Work quickly once the marshmallows are melted as the mixture sets fast. If the mixture gets too stiff, return the pot to low heat for 10-15 seconds to loosen it. For cleaner cuts, dip your knife in hot water between slices. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
