Ingredients

Scale
  • 1 ½ cups (180 g) all-purpose flour
  • ½ cup (50 g) cocoa powder (natural or Dutch-processed)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (200 g) granulated sugar
  • ½ cup (115 g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ¾ cup (180 ml) buttermilk, room temperature (or milk + 1 tbsp lemon juice)
  • 1 tsp vanilla extract
  • 1 tsp espresso powder (optional)
  • A few drops black food coloring gel
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Black food coloring gel as needed
  • 12 tbsp milk or cream (to thin frosting if necessary)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Sift together flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  3. In another bowl, beat softened butter and sugar until fluffy and pale, about 3-4 minutes.
  4. Beat in eggs one at a time, scraping down the sides as needed.
  5. Stir in buttermilk, vanilla extract, espresso powder, and black food coloring gel until smooth.
  6. Fold dry ingredients into wet ingredients in three parts until just combined; avoid overmixing.
  7. Divide batter evenly among liners, filling about two-thirds full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. Rotate pan halfway through baking.
  9. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla and black food coloring until deep black and creamy. Add milk by teaspoon if too thick.
  11. Pipe a smooth circle of frosting (1-2 tablespoons) on each cupcake using a piping bag with a round tip.
  12. Pipe concentric circles of white frosting on top, then drag a toothpick from the center outward through the rings to create a spider web pattern.

Notes

Use gel or paste black food coloring for best results; avoid liquid food coloring to prevent thinning the batter. Chill frosting if too soft before piping. Rotate pan halfway through baking for even cooking. Practice spider web piping on parchment paper if needed. For dairy-free or vegan options, substitute ingredients as suggested.
