Quick and easy turkey and cheese pinwheel roll-ups made with cream cheese, perfect for lunchboxes or snacks. Ready in under 10 minutes with simple ingredients.

  • 4 flour tortillas (8-inch or 10-inch)
  • 8 oz cream cheese, softened
  • 810 slices deli turkey (oven-roasted or smoked)
  • 810 slices cheese (provolone, cheddar, or Swiss)
  • Salt and pepper to taste
  • Optional: 1 tsp ranch seasoning, 1 tbsp everything bagel seasoning, thinly sliced cucumber or bell pepper, fresh spinach leaves

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge 15 minutes before starting. If forgotten, microwave in a bowl for 10-15 seconds. Add a pinch of salt and pepper, plus any seasonings. Mix until smooth.
  2. Prep the tortillas: Place one tortilla on a cutting board. If stiff, microwave for 10 seconds between damp paper towels to prevent cracking.
  3. Spread the cream cheese: Using a spatula, spread a thin, even layer of cream cheese over the entire tortilla, leaving a 1-inch border around the edges.
  4. Layer the turkey: Place 2-3 slices of turkey flat over the cream cheese, overlapping slightly to cover evenly.
  5. Add the cheese: Lay 2-3 slices of cheese over the turkey, overlapping slightly. Trim if needed to fit flat.
  6. Optional add-ins: If using spinach, cucumber, or bell pepper, layer them now. Keep layers thin.
  7. Roll it tight: Starting from one edge, roll the tortilla tightly toward the opposite edge, tucking filling in as you go. Keep even pressure.
  8. Wrap and chill: Place the rolled tortilla seam-side down on plastic wrap. Wrap tightly, twisting ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 30 minutes (overnight is better).
  9. Slice and serve: After chilling, unwrap each roll and slice into 1-inch pieces using a sharp serrated knife with a gentle sawing motion. Aim for 6-8 pinwheels per tortilla.
  10. Pack or plate: Arrange pinwheels in lunchboxes or on a platter. Secure with toothpicks if packing for lunch. Add a small ice pack to keep fresh.

Notes

Chilling is essential for clean slices. Warm tortillas to prevent cracking. Use full-fat cream cheese for best texture. Make ahead the night for best flavor. Do not freeze.
