  • 2 tablespoons (30 ml) rice vinegar
  • 1 teaspoon (about 4g) granulated sugar
  • Pinch of salt (about 1/4 teaspoon), optional

Instructions

  1. Wash and slice the cucumbers as thinly as possible, about 1/8 inch (3 mm) thickness.
  2. In a mixing bowl, combine 2 tablespoons (30 ml) rice vinegar and 1 teaspoon (4 g) granulated sugar. Stir gently until the sugar dissolves completely.
  3. Add the sliced cucumbers and a pinch of salt (approx. 1/4 teaspoon) to the bowl. Mix gently until every slice is coated.
  4. Let the salad sit for 10-15 minutes at room temperature or refrigerate for a cooler, crisper bite.
  5. Before serving, stir and taste. Adjust salt or sugar if needed.

Slice cucumbers as thin as possible for best flavor absorption. Adjust vinegar and sugar to taste. Salt cucumbers lightly before mixing to reduce wateriness.
