  • 1/2 cup (125g) peanut butter, smooth or crunchy
  • 1/3 cup (113g) honey
  • 1/4 cup (45g) mini chocolate chips (optional)
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well blended.
  3. Add rolled oats to the wet mixture and stir until fully coated and evenly combined. If too dry, add a teaspoon of honey or peanut butter.
  4. Fold in mini chocolate chips gently.
  5. Transfer mixture to the prepared pan and press firmly and evenly using a spatula or lightly greased hands.
  6. Bake for 12-15 minutes until edges turn golden and bars feel set but not hard.
  7. Cool completely in the pan on a wire rack for at least 30 minutes. Use parchment overhang to lift out and slice into 8 or 10 bars.

Notes

Do not overbake to keep bars chewy. Press mixture firmly into the pan for bars that hold together well. Cool completely before slicing to prevent crumbling. Use natural peanut butter to avoid oil separation. Mini chocolate chips melt less and help maintain texture. For gluten-free, use certified gluten-free oats. Variations include swapping peanut butter for almond or sunflower seed butter, adding dried fruit or nuts, or using maple syrup for a vegan version.
