A quick, creamy, and comforting mac and cheese made entirely in the microwave with just five simple ingredients. Perfect for dorm rooms, late-night cravings, or when you need a warm hug in a mug.

Ingredients

Scale
  • 1/2 cup (60g) elbow macaroni
  • 1 cup (240ml) water
  • 2 tablespoons (30ml) milk (whole milk preferred)
  • 1/4 cup (30g) shredded cheddar cheese (sharp cheddar recommended)
  • 1 tablespoon (14g) unsalted butter
  • Pinch of salt (optional)

Instructions

  1. Add the pasta and water to a microwave-safe mug or bowl. Ensure the water covers the pasta completely.
  2. Microwave on high for 2 minutes. Watch for boil-overs; pause if needed.
  3. Stir the pasta and microwave for another 2 minutes on high.
  4. Check the pasta for doneness. It should be al dente. If still firm, microwave in 30-second increments until tender. Most water should be absorbed.
  5. Carefully drain any excess water from the mug.
  6. Add the butter and milk to the hot pasta. Stir until the butter is completely melted.
  7. Sprinkle in the shredded cheddar cheese and stir vigorously until fully melted and smooth. Add a splash more milk if too thick.
  8. Season with a pinch of salt if desired. Let cool for a minute before serving.

Notes

For best results, use room temperature milk and butter to prevent the cheese from seizing. Microwaves vary in power; adjust cooking time as needed. Do not overcook the pasta initially as it will continue to cook when hot butter and milk are added. The sauce should be glossy and coat the pasta evenly. For a vegan version, use nutritional yeast, plant-based butter, and unsweetened almond or oat milk.
