  • 4 oz cream cheese, softened
  • 1 tablespoon Dijon mustard

Instructions

  1. Brown the beef: Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it apart, until browned and no longer pink (about 5 minutes). Drain excess fat if needed, leaving about 1 tablespoon.
  2. Sauté aromatics: Add diced onion to the pot with the beef. Cook for 2-3 minutes until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add liquids and potatoes: Pour in chicken broth and milk. Add diced potatoes, Dijon mustard, Worcestershire sauce, and pickle relish (if using). Stir, scraping up any browned bits from the bottom.
  4. Simmer: Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 20-25 minutes until potatoes are tender. Stir occasionally. For a thicker soup, mash some potatoes against the side of the pot.
  5. Incorporate cheeses: Reduce heat to low. Add softened cream cheese and stir until melted (about 2 minutes). Gradually sprinkle in shredded cheddar, stirring constantly until smooth and creamy. Do not let the soup boil after adding cheese.
  6. Season and adjust: Taste and add salt and pepper as needed. If too thick, add a splash of milk or broth. If too thin, simmer uncovered for a few minutes to reduce.

For best results, shred cheese from a block to avoid anti-caking agents. Let cream cheese soften at room temperature for 15-20 minutes before adding. Add cheese off the heat to prevent graininess. Soup thickens as it sits; let rest 5-10 minutes before serving. For a gluten-free version, use certified gluten-free broth and Worcestershire sauce.
