  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 2 medium apples (about 300g), peeled, cored, and diced into 1/4-inch cubes
  • 1/2 cup (60g) powdered sugar
  • 23 tablespoons milk or water

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the short sides.
  2. Peel, core, and dice apples into small cubes. In a small bowl, toss apples with 1/4 cup brown sugar and 1 teaspoon cinnamon. Set aside. (Optional: sautรฉ in 1 tablespoon butter for 3-4 minutes, then cool.)
  3. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and remaining 1 teaspoon cinnamon. Make a well in the center.
  4. In a separate medium bowl, whisk together melted butter, eggs, vanilla, and buttermilk until smooth.
  5. Pour wet ingredients into the well of dry ingredients. Stir gently with a rubber spatula just until no streaks of flour remain. Do not overmix.
  6. Pour half the batter into the prepared pan. Spoon half the apple mixture over the batter, pressing down gently. Pour remaining batter over apples, then top with remaining apple mixture. Sprinkle any leftover brown sugar-cinnamon mixture on top.
  7. Bake on center rack for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 35 minutes if browning too quickly.
  8. Cool in pan on a wire rack for 15 minutes. Use parchment to lift bread out and transfer to rack to cool completely, about 1 hour.
  9. In a small bowl, whisk powdered sugar with 2 tablespoons milk or water. Add more liquid 1 teaspoon at a time until thick but pourable. Drizzle over cooled bread.
  10. Slice with a serrated knife. Serve at room temperature or warmed gently.

Notes

Don’t overmix the batter. Use firm apples like Honeycrisp or Granny Smith. Layer apples in two layers for even distribution. Cool completely before glazing. Bread is even better on day two.
