  • 8 large cinnamon rolls, cut into quarters (store-bought or homemade, Pillsbury recommended)
  • 6 large eggs, beaten, room temperature
  • 2 cups whole milk or 2% milk (can substitute almond or oat milk for dairy-free)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50 grams) packed brown sugar
  • 2 tablespoons melted butter (use dairy-free margarine if needed)
  • Powdered sugar for dusting or optional drizzle
  • Maple syrup for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the cinnamon rolls into quarters.
  3. Arrange the cinnamon roll pieces evenly in a greased 9×13 inch baking dish.
  4. In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, brown sugar, and melted butter until smooth and slightly frothy.
  5. Pour the custard evenly over the cinnamon rolls and press gently with the back of a spoon to help them soak up the mixture.
  6. Cover the baking dish with foil and refrigerate for at least 30 minutes, or up to overnight.
  7. Remove the dish from the fridge about 20 minutes before baking to bring it closer to room temperature.
  8. Bake covered for 25 minutes, then remove the foil and bake uncovered for another 20-25 minutes until the top is golden brown and custard is set but soft inside.
  9. Let cool for 10 minutes before dusting with powdered sugar and drizzling maple syrup.

Notes

Use room temperature eggs and milk for better custard blending. Do not skip the soaking time for best custardy texture. Tent with foil if top browns too quickly. Use a toothpick test to check doneness. Variations include adding fruit, nuts, or using dairy-free substitutes.
