  • 1½ teaspoons kosher salt (plus more for salting)
  • ¾ cup sour cream (full-fat preferred)
  • 2 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 3 tablespoons fresh dill, finely chopped
  • ½ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced

Instructions

  1. Wash and slice the cucumbers into thin rounds, about ⅛-inch thick.
  2. Place sliced cucumbers in a large mixing bowl. Sprinkle with 1½ teaspoons kosher salt and toss gently. Let sit at room temperature for 20 to 30 minutes until liquid pools at the bottom.
  3. Transfer cucumbers to a colander and drain for a few minutes. Spread on a clean kitchen towel or paper towels and pat dry.
  4. If using red onion, thinly slice half a small onion. For milder flavor, soak slices in cold water for 10 minutes, then drain and pat dry.
  5. In a small bowl, whisk together sour cream, white vinegar, sugar, and black pepper. Taste and adjust vinegar or sugar as desired.
  6. In a clean large bowl, combine dried cucumbers, sliced red onion, and fresh dill. Pour dressing over top and toss gently until evenly coated.
  7. Cover bowl and refrigerate for at least 30 minutes before serving. Flavors meld and deepen over time.

The salting step is crucial for a non-watery salad. Taste cucumbers after salting; if too salty, rinse quickly under cold water and pat dry. Start with about two-thirds of the dressing and add more as needed. Use fresh dill for best flavor. Salad improves with time; can be made a day ahead.
