A quick and simple flatbread recipe made with just cottage cheese, flour, and eggs, delivering a crispy outside and tender inside. Perfect for snacks, light meals, or a versatile base for toppings.

  • 1 cup small-curd cottage cheese (240 ml)
  • 1 cup all-purpose flour (120 g)
  • 2 large eggs
  • Optional: pinch of salt
  • Optional: fresh herbs like rosemary or thyme
  • Optional: garlic powder or onion powder

Instructions

  1. Preheat your oven to 425°F (220°C) and position the rack in the middle.
  2. Drain the cottage cheese in a fine mesh sieve or cheesecloth for 5-10 minutes to remove excess liquid.
  3. In a mixing bowl, beat the eggs lightly, then add the drained cottage cheese and stir until combined.
  4. Gradually fold in the flour until the batter is thick but spreadable. Adjust with a tablespoon of water or milk if too dry, or more flour if too wet.
  5. Optionally, add a pinch of salt or herbs and spices to the batter.
  6. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Pour the batter onto the sheet and spread evenly into a 10×12 inch (25×30 cm) rectangle or circle about 1/4 inch (0.6 cm) thick.
  7. Bake for 20-25 minutes until edges are golden brown and the center is firm. For extra crispiness, broil for 1-2 minutes, watching carefully to avoid burning.
  8. Let the flatbread cool on a wire rack for 5 minutes before slicing into squares or strips. Serve warm or at room temperature.

Notes

Drain the cottage cheese well to avoid soggy flatbread. Use room temperature eggs for better mixing. Spread batter evenly about 1/4 inch thick for best texture. Broil briefly for extra crispiness but watch carefully. Can be cooked on stovetop in a hot skillet for 3-4 minutes per side as an alternative.
