Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels (about 5 minutes).
  2. Season both sides generously with salt and freshly cracked black pepper.
  3. Heat a heavy-bottomed skillet or cast iron pan over medium heat and add 1 tablespoon of olive or neutral oil. Warm until shimmering but not smoking.
  4. Place the chicken thighs skin-side down in the pan without overcrowding. Press lightly with tongs to ensure even contact. Cook undisturbed for 10-12 minutes until the skin is deeply golden and crisp.
  5. Flip the chicken thighs and reduce heat to medium-low. Cook for another 8-10 minutes until the internal temperature reaches 165°F (74°C).
